Cauliflower is a great vegetable that can either be the star of your dish or serve as a nice vehicle to add texture and nutrition. This versatile vegetable is easy to prep and cook without the guilt.
This recipe is vegan and allergy friendly.

Ingredients
Serves: 6 to 8
1 head of cauliflower, cut into small florets
3 - 4 Tablespoons of olive oil (or oil of your choice)
2 teaspoons kosher salt
1/2 teaspoon cracked black pepper
4 cloves of garlic, finely chopped (optional)
1 lemon (optional)
Preparation
Step 1
Preheat the oven to 425 degrees F
Step 2
Clean and chop up the cauliflower to small florets.
Step 3
In a large mixing bowl, toss the cauliflower with the oil, garlic (if using), salt and black pepper. Once mixed, place on a sheet pan and roast in the oven. They are done when the color begins to turn golden.
Tips
Toss the cauliflower mid way through to evenly brown. If you want to add a little more flavor, try squeezing lemon over the roasted cauliflower as a finishing touch.
