If you're looking for a healthy alternative to green salads, quinoa salads are a nice option. The salads are not only nutritious but also filling and so versatile and easy to assemble.

Ingredients
Serves: 4 to 6
1 cup quinoa
1 red bell pepper
1/2 small purple onion
1/2 cup dried cranberries
1/4 cup pumpkin seeds
1 - 2 avocados (optional)
Vinaigrette dressing of your choice
Preparation
Step 1 Wash the quinoa and begin cooking based on directions on the package (I use 1 cup quinoa, 2 cups water). If you prefer a drier fluffy version, scale back the liquid to 1 1/2 cup water. Step 2 While the quinoa is cooking, dice up the bell pepper and onion. Step 3 Combine the bell pepper, onion, dried cranberries in a mixing bowl. Save the pumpkin seeds and avocado for the last step. Step 4 Add the fully cooked quinoa into the mixing bowl with the other ingredients, and top with the choice of your vinaigrette dressing. Depending on how much flavor you want, you can scale up or down, but I usually use about 1/2 cup of dressing. (Tastes best after the dressing is fully absorbed) Step 5 Add the pumpkin seeds and avocados before serving.
